In 1992 the Morini family bought a historic farmhouse from the early 1900s surrounded by beautiful vineyards in the heart of the Val di Mezzane. In this quiet area it was decided to build a new building to be used as a wine-making and maturation cellar.
The modern and functional building allows today to make wine up to 3000 qli of wine thanks to the 5 modern fully automatic 150 qli fermenters, which reduce oxidation of the future wine to a minimum.
The approximately 30 wine vessels, of various sizes, all thermally regulated, guarantee an adequate storage of the wine waiting to be bottled. The whole area below, 6 meters deep, is dedicated to the maturation and rest of the wine. The presence of 600 oak barrels from various geographical areas, cradle and accompany this splendid nectar to full maturity.
VINEYARDS AND OLIVE GROVES
ILATIUM is a company that has been modulated over time, acquiring plots of land over the years as it assumed its current characteristics.
Today 40 hectares of land are directly cultivated, divided between the Valpolicella and Soave areas, producing about 6 thousand quintals of DOP grapes.
The vineyards, located in three nearby geographical areas, but with completely different microclimates and soils, provide the possibility of obtain blends with different organoleptic characteristics, with different maturation periods, such as to allow better logistics during the hectic harvest days.
The main vineyards of ILATIUM are:
“La Calle” vineyard Located in the center of Val d’Illasi in Calle, at an altitude of 75/80 meters above sea level, Garganega and Trebbiano di Soave DOP grapes are produced. The training system is pergola with a density of planting. of 4,500 strains has. The soil is the typical alluvial limestone with a silty, sandy and gravelly texture, from the Illasi valley;
Vineyard “Sottomonte” Located at the foot of the mountain “Tenda” to the east of the village of Illasi in the Sottomonte locality at an altitude of about 160 meters above sea level, Corvina, Corvinone, Rondinella, Croatina DOP grapes are produced. The training system is Guyot with a plant density of 8,000 plants Ha. In this area the classic calcareous alluvial soil of Illasi diverges into the clay component, while the skeleton is considerably reduced;
“Forade” vineyard Located in the center of Val d’Illasi, in Forade at an altitude of about 200 meters above sea level, Corvina, Corvinone, Rondinella and Croatina DOP grapes are produced. The training system is espalier with a planting density of 8,000 ha. The soil is the typical alluvial limestone with a silty, sandy and gravelly texture, from the Illasi valley;
“Ai Progni” vineyard Located in the center of Illasi, in the immediate vicinity of the Progno stream, at an altitude of about 70 meters above sea level, Garganega and Trebbiano di Soave PDO grapes are produced. The main farming system is espalier with a planting density of 8,000 ha. The soil is alluvial with a very important medium-sized skeleton. In this area a Guyot-bred vineyard has been experimented, with a planting density of 13,000 ha, which in these years has reached full maturity;
Vineyard “Leòn” Located in the middle of Val Mezzane at about 120 meters above sea level where both Corvina, Corvinone, Oseleta, Croatina, Rondinella DOP and Garganega DOP grapes are produced. The main training system is Guyot with a perfect north-south orientation and a plant density of about 9,000 vines per hectare. The calcareous alluvial soil greatly increases its clay component.
“Mezzane ai Monti” vineyard Located on the western hills of the village of Mezzane di Sotto at an altitude of about 300 meters above sea level, Corvina, Corvinone, Rondinella and Croatina DOP grapes are produced here, with a half pergola and half a training system. Guyot. The average age of the vines is around 30 years and the plant density is around 5,000 vines. The soil is clayey with an almost absent skeleton.
“Grezzana” vineyard Located on the eastern hills of the village of Grezzana, it is located at an altitude of about 200 meters above sea level. The grapes produced are Corvina, Corvinone, Rondinella and Croatina DOP with training systems mainly Guyot. The average age of the vineyards is 30 years and the average plant density is around 5,000 vines. The soil is calcareous with a small skeleton.
Oliveto “l’Olivara” Oliveto situated south west of the mountain of the castle of Illasi, at an altitude of about 300 meters above sea level. The presence of ancient olive trees indicate the particular vocation of this territory to the production of olives. The main qualities present are the Perlarol, the Favarol, the Grignano and the Frantoio. The soil is clayey with an important skeleton located just a few cm from the first layer of soil.
