THE VINEYARD: The origin of the vine in Sicily dates back to the 12th century BC. And it was probably imported by the Phoenicians, but the discovery of some wild plants found on the slopes of the Etna attributes the presence already from the tertiary era. Nero D’avola is the autochthonous expression of this vine in the land of Sicily, also known as the term Calabrese or Calabrese D’avola.
HARVEST: The grapes are selected in the vineyard and hand-picked in the first decade of October
YIELD: 100 Q.Li/Ha
VINIFICATION: The grapes are destemmed and then the vinification is carried out. Maceration is carried out in horizontal rotative vats of 500hl. During this period 10-14 days, the wine completes the alcoholic fermentation at a temperature not exceeding 26°C. The wine is then transferred into 225lt wooden barriques to complete the malolactic fermentation. After 6 months the wine is removed from the barriques and bottled. The wine is refined in the bottle before being introduced to the market.
CHARACTERISTICS: This is a well-structured wine, delicate, and rich with velvety tannins and sweet-smelling. It offers aromas of cherry, blackberry, bilberry, with nuances of vanilla and chocolate. The palate is worm and winding, it is soft with a great structure. Ready for immediate consumption but will stand the test of time.
FOOD AND WINE PAIRING: This wine brings out the best in roasted red meat, game and medium-aged cheese.
