The Bignotti winery was born from the idea of rediscovering the Valcamonica winemaking tradition.
The Cantina Bignotti was founded in 1997 by Giorgio Bignotti and his two sons, Marco e Andrea, with the aim to revive the tradition of wine in Valcamonica.
Already in the year in which it arose, the company began replanting part of this vineyard according to a new breeding methodology for Vallecamonica: the guyot. The following year in 1998, with the Cultivar delle Volte, the first bottle of Camuno wine was reborn after about twenty years after the disappearance of the Lanzato wine. In 2001 the small vineyard was completely replanted, hence the need to buy an old vineyard, now uncultivated for about twenty-five years and mostly reforested, but already suited for exposure to the Lanzato wine: the vineyard Fenocolo.
Alongside the vineyards, the family has also planted an olive grove , from which the Cultivar delle Volte extra virgin olive oil is produced in limited quantities.
THE VINEYARDS
In the municipality of Piancogno along the ancient municipal road of the Volte that connects the town of Piamborno with the minor fraction Annunciata , the two vineyard plots that give origin to our wines extend .
The first vineyard along the Via delle Volte can be seen behind the church of the village of Piamborno .
It is the vineyard from which all reality has come to life that is located next to the historic cellars of the 1400s where wine-making and refining of all the ‘Cultivar delle Volte’ wines still takes place .
The second plot is located later in the ‘Fenocolo basin’ , just below the first of the many turns that characterize the ancient road .
THE CELLAR
The Bignotti winery where ‘Il Cultivar Delle Volte’ is produced starting only from the grapes produced in its own vineyards and at the end of its bottling transformation process are found in via monte Grappa in Piamborno behind the church of the country.
They are historic cellars on two levels in order to carry out the so-called ‘fall vinification’ : On the arrival floor of the grapes we proceed to the selection of the bunches , to the destemming and crushing for the red grapes and soft pressing for the white grapes.
After the first phase of fermentation at a controlled temperature,the wine is sent by fall to the underground cellar where fermentation continues, it is aged in steel and / or oak barrels and finally bottled.
Our bubbles are produced with the classic method , the riddling is carried out manually on wooden pupitres in the underground wine cellar .
This 2019, Cantina Bignotti has won 3 Gold and a Silver Medal in 2019 Asia Import News Challenge.

Winemaking : the selected bunches are de-stemmed and crushed and the fermentation involves maceration on the skins for about 9 days. After the first fermentation the wine is aged for 15 months in barriques.

Features : A powerful wine that fully expresses all its territoriality, sharp, with the right tannins that even more domesticated will guarantee over time a rare penetrating force. Aromas of raspberries and blueberries with light pleasant shakes due to minerality and tannins, with hints of spices and resins and pleasant balsamic gusts.

Features: Bright ruby red wine. On the nose it shows a great finesse and harmony of fruity scents. There are notes of red berry fruits. In the mouth it is persistent, well structured.

Features : On the nose it shows a great finesse and harmony of fruity scents. The perlage is fine and frequent, in the mouth it is fresh and slightly aromatic
