Could you please tell us the story of your winery, when it was created and how it developed decades after decades ?
The Bonnet family is making champagne as Récoltant Manipulant in Chamery since 1862. The house became Bonnet-Ponson with the mariage of André Bonnet and Monique Ponson in 1957. Together they expanded the vineyard and the production up to 80 000 bottles. Today the 5th and 6th generation Thierry and Cyril Bonnet are in charge of the domain, perpetuating the tradition of Champagne making.
What sort of wines are you producing ?
We only produce Champagne from our vineyard of the montagne de Reims, classified Premier Cru and Grand Cru.
How important are your export distribution compared to national distribution ?
The proportion is about 50/50
What sort of distributors are your customers ?
Restaurant/wine shop who look for artisan and promote authentic wine.
Why your wines are different from other wineries in your area ?
Our wine only comes from the family vineyard, 50 parcels of 35 years old age in average. They are made following a very natural vinification process, using no filtration and very low sulfits doses, a condition to respect the right expression of the initial fruit and the terroir characteristics. In addition to that, they are aged in our cellar for a minimum of 4 years in bottle, giving them a touch of maturity that enhance their initial complexity.
Do you produce grapes in a organic or environmental friendly method, or with general methods ?
The entire vineyard is work in organic farming since 2013, the first organic certified wines will be bottled this year and released in 2019.
Are your wines already distributed in Asia, and if not what are the countries you are looking for new distributors ?
We are present in Hong-Kong and Cambodia, also looking for new distribution in Japan and Singapore.
Is there anything who want to add about your wines, story or any news ?
The house has opened a little hotel above the cellar, with the view on Chamery’s beautiful vineyard, a restaurant with local and organic products is also open on the week-end.
